Toshikoshi: New Year’s Soba Soup
Toshikoshi soba: the perfect food if you want a long, lean life, and a lucky New Year. Toshikoshi translates roughly to “passing of the year” in Japanese, and this is the food often eaten that night, before the clock strikes 12!
Join Sonoko Sakai on Sunday, December 27th at 11:00AM PST / 02:00PM EST for a 1hr. 45min online workshop on the art of making traditional Japanese Soba from scratch. In this workshop, she will review making Nihachi-style (80% buckwheat flour, 20% wheat flour) and Juwari-style (100% buckwheat flour) noodles.

Handmade Soba Noodles – Nihachi-style soba noodles made from scratch. Making these noodles is sure to work-up an appetite!
Toshikoshi Duck Soba Soup – A traditional preparation style soba noodles, typically served around the new year. The noodles are cooked and shocked, then served in a kombu-shiitake dashi broth seasoned with soy sauce, sake, and mirin. The dish is topped with seared, vinegar braised duck breast and leeks. Recipe includes a vegan alternative to duck breast: seared and braised shiitake mushrooms.
Fee: $75.00 per household/device – up to 2 cooks (*includes zoom link, prep list, recipes, and 30-day access to workshop recording)
